Berries and Cream Jello Salad



I have said it before and I will say it again . . .
I love Jello. :)
Shortly after I got married, I was planning a Sunday dinner for my husband and I and when he read the menu, he couldn't believe that I was serving Jello as a side dish. He thought I was so weird!
No worries- he has now come around and loves it as much as I do! I have come to learn that wives have a lot of power! :)
This recipe was a favorite that my mom would make when we were growing up. You could easily switch out or add your favorite berries and even if you don't like cream cheese, you could top it with whipped cream instead.

Berries and Cream Jello Salad
Ingredients:
1 (6 oz) box raspberry jello
2 cups boiling water
1 (20 oz) can crushed pineapple, undrained
1 (21 oz) can blueberry pie filling
1 (8 oz) package cream cheese, softened
1 cup sour cream
1/2 cup sugar
1 teaspoon vanilla
Fresh berries for garnish (I used blackberries, but any berries work)

Directions:
Mix together the box of jello and boiling water in a large bowl. Stir until all jello is dissolved. Mix in can of pineapple and can of pie filling until combined. Pour jello mixture into a 9x13 pan and refrigerate until set (about 4-5 hours).
Mix together cream cheese, sour cream, sugar, and vanilla and beat until smooth. Place a spoonful of cream on each serving. Garnish with fresh berries.

  8. This is my go-to salad for parties (although I don't include the pineapple and it's still delish!) Everyone loves it! You can also do cherry jello + cherry pie filling, or blueberry jello + blueberry pie filling.
