Peppermint Crunch Ice Cream Pie

I had to bring my own pie to Thanksgiving dinner because I don’t love pumpkin pie (I know, I know . . . something is seriously wrong with me). However, I do love all things peppermint flavored and I am a sucker for ice cream . . . the rest is history. My family devoured this pie even faster than the pumpkin pie!
I used a pre-made crumb pie crust, but you could definitely make your own crust if you are super ambitious.
Peppermint Crunch Ice Cream Pie
Ingredients:
3 pints (1 1/2 quarts) peppermint ice cream
1 Oreo cookie pie crust (or other chocolate-flavored pie crust)
1 (12 oz) jar fudge ice cream topping
Crushed Candy canes
Whipped topping
Directions:
In a large bowl, stir ice cream until softened.
Spoon ice cream into pie shell and spread evenly. Return to freezer for about 3-4 hours (or until completely frozen).
To serve, let pie stand at room temperature for about 5 minutes before slicing. Serve topped with fudge topping, whipped cream, and crushed candy canes.
Makes about 6-8 servings (just depends on how big you slice it!).

What is really funny is that I made something VERY similar to this about 30 years ago for a priest friend of ours. FRIDAY night-he was talking about THAT pie. I think I have to make another one now- this one is a lot less labor intensive than the one I made. Happy Sunday- xo Diana

I’m with you girl. Not a fan of pumpkin but love all things peppermint! Must be a sign of how truly fabulous we are. Thanks for the recipe but if I buy the ice cream it probably will not make it into a pie. : )
It’s going to be even better if you use FARR’s brand Peppermint stick ice cream! OMG once you try it you will NEVER be able to eat the other brands its that good! lol
We don’t get Farr’s ice cream, but Schwann’s peppermint is awesome!
