No-Bake Buckeye Bars Recipe:
Ingredients:
Bars:
Nonstick cooking spray
2 cups creamy peanut butter
3/4 cup unsalted butter, softened
2 cups powdered sugar
3 cups pretzel sticks, crushed
Toppings:
1/2 cup creamy peanut butter
2 cups semisweet chocolate chips
Crushed pretzels
Directions:
Line a 9×13 baking pan with parchment paper and spray with nonstick cooking spray. In a large mixing bowl, combine peanut butter, softened butter, powdered sugar and crushed pretzel sticks. Press evenly into prepared pan. In the microwave, melt the chocolate chips with the peanut butter, stirring every 30 seconds until melted and smooth. Spread over the peanut butter layer. Sprinkle on crushed pretzels. Refrigerate for at least one hour before cutting into squares.

Awesome post! This recipe is brilliant. I mean it. I’m busy “as all get out” this holiday season (although – in the world that I live in as an off-premise caterer/event planner, it’s not a big surprise and more like… What else is new?), I’m sure you guys are busy too, and I know most everyone else is too — so, this recipe… being “no bake” and all, is perfect!

Looks so easy. Are the pretzels measured before or after crushing? Would be hard to measure 3 cups of pretzel sticks.

Thank you!! Why didn’t I think of this?! Bars! I have so much baking to do this weekend and I really wanted to make Buckeyes but didn’t want to take the time to shape, freeze, melt chocolate, dip and freeze again. This version will save me so much time. You rock.
Being a Penn State Student and the fact that I bleed Blue & White, I always have problems with eating/making Buckeyes. BUT, on the other hand, I love them because they are so freaking good! These look delicious, I will definitely have to try. Thanks for sharing!
