Cherry Chocolate Nut Bars

These Cherry Chocolate Nut Bars are a family favorite.  Our cute neighbor Sylvia makes these every year for Christmas.  If you are not home when they are delivered, you will have a whole year to wait for another shot at one of these yummy bars! They will go fast!  We finally got the recipe from her.  They are so easy to make and very addicting.  They taste just like a Big Cherry candy bar!

Cherry Chocolate Nut Bars

Ingredients:
12 ounces milk chocolate chips
3/4 cup chunky peanut butter
12 ounces salted peanuts, chopped
1 package (10.5 ounce) miniature marshmallows
1 container cherry frosting (16 ounce)

Directions:
Melt chocolate chips and peanut butter on low in the microwave. Stir well and add the chopped peanuts.  Spread half of this mixture in a 9 x 13 inch glass pan sprayed very lightly.  Place in fridge to set up.  Melt marshmallows.  We melted it in the microwave on very low stirring every 20 seconds. When melted and smooth, stir in the frosting.  Spread this mixture carefully on top of the chocolate layer.  Let cool in the fridge.  Then top with remaining chocolate for the last layer.  If it has set up a little, just microwave it for about 30 seconds and stir well.  Be sure to spread each layer to the edges of the pan.

Refrigerate until firm.  Cut into pieces – about 48.  Store in refrigerator.

    Betty Crocker makes a cherry frosting (I found it at Wal Mart). Duncan Hines has the new frosting where you have to add the flavored powder and they have a cherry-vanilla that would work. Hope this helps! These are super yummy!

  4. Could you just make homemade buttercream with almond flavoring? We always say it tastes like cherry. And also, would it work to use a container of marshmallow cream instead of melting the marshmallows? I happen to have the one and am out of the other. Thanks!

      Did you try it with the marshmallow cream? I only ask b/c I wanted to try it too if it worked. I just made this with actual marshmallows like the recipe called for but I had difficulty trying to get them to melt smooth enough.

    We have only made this following the recipe. But if your homemade buttercream is what you like, I think it should work. We’re not sure on the marshmallow cream. I’m thinking it may just work! Good luck!
