My Mother-in-Law came to help before I had my baby and she cooked up this meal. Sometimes I feel like a lot of my slow cooker meals taste the same but this was so different! It is so easy to throw together and it is delicious!!!
Slow Cooker Chicken Tortellini
3 to 4 Boneless Skinless Chicken Breasts, cooked and cubed
1 frozen package of 3 cheese tortellini
26 oz Jar of Spaghetti Sauce (I like Ragu)
15 oz can of diced tomatoes
15 oz Low fat Ricotta Cheese
2 Tablespoons of butter
2 cups of fresh spinach
1 cup sliced fresh Mushrooms
1/2 onion, diced
1/2 can of olives, sliced
Saute the spinach, mushrooms and onion in the butter. Add the cooked cubed chicken until warmed through.
In a separate bowl mix together the spaghetti sauce, the canned tomatoes and ricotta cheese.
In a greased crock pot place your tortellini, veggie and chicken mixture, spaghetti sauce mixture, and olives. Stir all together before placing the lid on top.
Cook on Low 4 to 6 hours.
Sprinkle Parmesan cheese on top before serving!
