I had never heard of the Panera Bread Company until I moved to Missouri. We lived about 2 hours away from one but when we did get close to one…. you can bet that is where we went! The sandwiches taste amazing! When I saw that they posted some of their recipes online I was so excited to try one! Obviously I couldn’t use Panera Bread for my sandwich but I found some artisan bread (found at most grocery stores) that was pretty darn close. There is nothing like a warm sandwich on a cold day!
1 round Artisan Bread
3 tablespoons light mayonnaise
2 teaspoons Dijon mustard
5 ounces thinly sliced smoked provolone
8 ounces thinly sliced smoked turkey breast
1 ripe tomato, thinly sliced
1 ounce baby spinach leaves (optional)
1. Heat a grill, grill pan or panini press to medium heat. Cut the Artisan bread in half through the side to make two large rounds.
2. Spread the mayonnaise and mustard over the top round of the bread. (I’m a huge miracle whip fan and I put it on both rounds of the bread) Arrange the provolone over the bottom round of bread. Layer the turkey, tomato, and spinach(optional) over the cheese. Top with the spread round of bread and coat sandwich all over with cooking spray.
3. Grill the entire round sandwich over medium heat. Put a heavy weight, such as a heavy pan or foil-wrapped brick, over the sandwich to compress it. Or, if using a panini press, press down the lid. Cook until nicely marked by the grill and the cheese melts – about 3 to 5 minutes. Cut into 4 wedges and serve.
