Oven Fried Chicken Recipe

Directions:
Put chicken strips and buttermilk in a large Ziploc bag. Seal bag tightly and allow chicken to soak for at least an hour. Preheat oven to 400 degrees. In a shallow pie pan, combine seasoning salt, pepper, flour and paprika. Spray the bottom of a 9×13 baking pan with cooking spray then cut up the butter into pieces and place around the bottom of the pan. Place baking pan with butter in the oven for about 5 minutes or until the butter is melted and hot. Remove pan from oven. Shake excess buttermilk off of each piece of chicken and coat in seasoning mix. Place coated chicken pieces in the baking pan. Cook for 15 minutes, remove the pan from the oven and turn each piece of chicken and cook for 15 more minutes, or until golden brown and cooked through.

Could you use Panko bread crumbs instead of flour? Do you think it would work as well? Thanks!
I made this tonight, exactly how to recipe says. Kind of a disaster actually. When I flipped them half way through, they were soggy and all the breading came off the chicken. When they were done, the breading was still falling off. I had naked chicken. The second time (I had more chicken to cook since is didn’t fit in the pan) I did not add any butter to the pan, and it came out a little bit better, but for some reason the breading still fell off. I LOOOVED the flavor of the breading, so I’ll use that again, I just need to figure out why it all fell off. Maybe I should stick to the egg mixture instead of the buttermilk?? I don’t know what I did wrong, but thank you for a good breading recipe!
