Healthy Meals Monday: Slow Cooker Italian Chicken Salad

My Mother-in-Law gave me this recipe right after we got married. It is our go to crock pot meal when I can’t think of anything else to make. It is so easy and this chicken can be used all kinds of ways!
Slow Cooker Italian Chicken Salad
Ingredients:
4 to 6 boneless, skinless chicken breasts
1 Tablespoon chili powder
1 Tablespoon cumin
16 ounce bottle fat free Italian dressing
Directions:
Spray your crock pot with non stick cooking spray. Put your chicken on the bottom of your crock pot. Sprinkle your chicken with the chili powder and cumin. Pour your dressing on top of the chicken.
Cook on Low heat for 6 to 8 hours. When it is done cooking, shred your chicken. This chicken served on soft tortillas with sour cream and toppings is so delicious!
I made a Cafe Rio type of salad, using:
Whole wheat tortillas
Wild rice
Romaine lettuce
Black beans
Sweet corn
Fresh salsa
Diced tomatoes
Diced avocado
Fat free sour cream

















Forget spraying the crockpot and scrubbing later! You MUST MUST MUST try the Crockpot liners, they are simply life changing! Well, maybe not life changing but they make clean up soooo much easier. They are sold in most grocery stores in by the aluminum foil and oven bags.
