Andes Mint Grinch Cookies

 

These cookies are the perfect Christmas Cookie! The bright green and minty flavor are a wonderful combination! These Andes Mint Cookies would also be great a for a cookie exchange! Happy Baking!

Andes Mint Grinch Cookies

Ingredients
2 3/4 cup flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup butter (at room temperature)
1 1/2 cup sugar
1 egg
1 tsp mint extract
15-20 drops green food coloring
1 bag of Andes mints (chopped or broken apart)

Directions
Preheat oven 375 degrees. Sift together the flour, baking soda, baking powder and salt and set aside. Unwrap the Andes Mints

In a large bowl, cream together the butter and sugar until smooth. Beat in egg and mint extract. Gradually blend in the dry ingredients and add the green food coloring. Mix until even colored. Last fold in the chopped Andes mints. (I also added some milk chocolate chips… just because I LOVE milk chocolate!)

Put in the refrigerator until the dough is cool.

Roll rounded teaspoonfuls of dough into balls.  To make them more rounded when they come out, flatten the balls as you place them onto ungreased cookie sheets.

Bake for 8-10 minutes. Let stand on cookie sheet for 2 minutes before moving them to wire racks to cool.

We watched The Grinch as we ate these cookies! My kids were in their heaven!

  1. I love Andes Mints!! The only time I ever really have them is that rare occasion we go to Olive Garden and I always ask the waitress to bring extra ;0) This will give me a good excuse to go out and buy a whole bag.

    I made these yesterday for a neighborhood Christmas party and they were a hit, and my boyfriend requested they be added to the holiday dessert rotation. My grocery store doesn’t carry Andes for some odd reason, so I used Hershey’s dark chocolate mint truffle kisses and they worked wonderfully. Thanks for the great recipe!!

    When it says mint extract, would peppermint extract work as a substitute? I’ve been told this is a no no when making brownies or chocolate cookies and to only use peppermint ex. So which one does this recipe call for?
