Ham, Egg, and Cheese Breakfast Roll-Ups

  

I know that it's Halloween, but the recipe that I am sharing today is perfect for any day of the year and any meal of the day. :)
I needed a quick breakfast the other morning and time was quickly running out . . . I knew that my kids would probably end up eating their meal in the car because we had to leave, so I wanted it to be something that wouldn't be too messy and something that they could hold in their hands. Some of their favorite meals are wrapped in crescent rolls, so I thought that it might be yummy to roll up their breakfast in a crescent too. It ended up being a huge hit with the kids (and my husband)! They were kind of like a mini breakfast burrito, but perfect for little hands to hold.
The possibilities of filling ingredients are endless; feel free to add whatever your family likes- bacon, sausage, red pepper, green chiles, tomatoes . . . anything goes!

Ham, Egg, & Cheese Breakfast Roll-Ups
Ingredients:
2 packages of 8 count refrigerated crescent rolls
1 cup cooked ham, cut into small pieces
1 cup shredded colby jack cheese
7 eggs, cooked and scrambled

Directions:
Unroll crescents onto a large ungreased cookie sheet.
Place a spoonful of scrambled eggs, a couple pieces of ham, and a sprinkle of shredded cheese on the wide end of each unrolled crescent.
Roll up each crescent, starting at the wide end and ending at the narrow end of the crescent.
Bake at 375 degrees for 11-13 minutes, or until crescents are golden.
Optional: Serve with salsa for dipping.

  7. Do these re-heat well? Sounds like it would be good to make on Sunday and grab throughout the week.

    1. I found that the crescent rolls kind of got squishy the next day and weren't as good . . . I think that they taste best when you eat them the same day you make them.

    2. I make these with homemade rolls instead of the crescent roll dough and freeze after baking. They reheat wonderfully that way.

  9. Can't wait to make these for my man before work. He sleeps as long as possible until he has to leave for work and usually doesn't have much time for breakfast, so these would be awesome since he could eat them during his 25 minute drive! (less messy than a wrap or breakfast burrito) ALSO great for Sunday football games!
