Slow Cooker Chicken and Broccoli Over Rice
Ingredients
3 Chicken Breasts
1 can (10.75 Oz. Size) Cream Of Cheese Soup
1 can (10.75 Oz. Size) Cream Of Chicken Soup
1-½ cup Chicken Broth
1 teaspoon Salt
¼ teaspoons Galic Salt
4 cups Cooked Brown Rice (I used minute rice)
2 cups Broccoli
1/2 cup fat free sour cream
Directions
1. Put everything in except sour cream, broccoli. and rice in the crock pot.
2. Cook on low for 6 hours or on high for 4.
3. Shred the chicken breasts with two forks.
4. In a rice cooker (or however you like), cook the rice.
5. Meanwhile, add broccoli to the crock pot and stir in.
6. Cook for another 30 minutes.
7. Stir in sour cream with the crock pot mixture.
8. Enjoy over a bowl of rice.

I love the sound of the recipe but I think I am missing something. You have in the directions to put everything in the slow cooker except sour cream, etc. I do not see sour cream in the ingredients. How much do I need? Thanks!

ReplyDeleteThe vast majority of the meat my family eats is boneless, skinless chicken breast meat, and I LOVE broccoli, so I can't wait to give this a try!

ReplyDeleteI am on a gluten-free diet and would probably substitute cream of chicken for GF cream of mushroom. What about cream of cheese, not sure I can find a GF substitute. Do you have suggestions?
ReplyDeleteSo I have been searching for you...but you could even try 1/2 cup shredded cheddar cheese and 1/2 cup GF cream of mushroom soup. Sorry I don't have any more solutions! Hope this helps!

ReplyDeleteI actually used frozen chicken breasts and it worked just fine. I also used raw broccoli and thought the same thing you did. But believe it or not... it was cooked rather well. Not too hard and not mushy! Thanks for your question!

ReplyDeleteYep! Some places don't carry cream of cheese soup so just cheese soup will work also. :)
