Easy Mexican Salsa Rice

 


Making a main dish for my family each night is easy . . . it's the side dishes that I really struggle with! Whenever we eat any kind of Mexican food, I always make our Slow Cooker Refried Beans as a side dish because they are so quick and easy (and delicious!). However, I needed something to mix it up. I had a box of brown instant rice in the pantry (confession: I don't even own a rice cooker. I gave it to my mom because it was taking up precious space in my kitchen cupboards and I never used it!) and wondered what would happen if I added some ingredients to it to "spice" it up. It totally worked and the end result was delicious! Easiest side dish EVER!

Easy Mexican Salsa Rice
Ingredients:
2 cups instant brown rice
2 cups water
1 envelope enchilada sauce mix (or you could use taco seasoning)
1 cup salsa (I used mild so my kids would eat it- go as hot as you want!)
1 (4 oz) can green chilis

Directions:
Combine all ingredients together in a microwaveable bowl. Microwave on high for 8-9 minutes, or until rice is tender. Let sit for 3-5 minutes and it will soak up most of the liquid in the bowl. Fluff with a fork and serve.

  8. can you use real rice? i'm trying to think of how you would substitute with the cooking of the real rice...any ideas?

    1. Hmmm . . . to be honest, I am not sure! Unfortunately I don't have much experience cooking with real rice . . . we just always use instant! Sorry that I am not much help!

  9. Genius! We had tonight with enchiladas. It was fantastic! It would also make a good filling to go in burritos. We will definitely make it again!

  10. We had a lot of rice leftover, so I made bean and rice burritos. I added a can of drained black beans and some shredded cheese. I rolled in a flour tortilla, and then I grilled the tortilla on my griddle. It was delicious! It made a very filling, inexpensive, meatless meal too!
