Mini Reese’s Peanut Butter Cup Cookies Recipe

My husband bought me a bag of the Mini Reese’s Peanut Butter Cups last week and I ate every last one of them!  They are so good and you don’t even have to unwrap them!  It doesn’t get better than that, right?  Not until you mix them in with peanut butter cookies, that is.  Let me tell you, they were delish!  I ended up having to send them with my husband to work so I wouldn’t eat them all!
Mini Reese’s Peanut Butter Cup Cookies Recipe:
(Makes 5 dozen cookies)
1 cup (2 sticks) butter
1 cup brown sugar
1 cup granulated sugar
2 eggs
1 1/2 cups peanut butter (creamy or chunky)
2 1/2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon vanilla extract
1 (8 ounce) pkg. Unwrapped Mini Reese’s Cups
Cream butter, sugar and peanut butter together.  Add eggs, flour, baking soda and vanilla extract.  Fold in Reese’s Peanut Butter Cups.  Roll dough into 1 inch (or a little larger) balls and place on ungreased cookie sheet.  Bake at 350°F for 10-12 minutes or until golden brown.
