Healthy Meals Monday: Simple Southwest Salad

This has been my “go to salad” for a long time. We have it every other week or so and we still love it! This recipe makes so much I usually have it for lunch a couple of times. This is also the salad that I bring to potlucks or big dinners - it really feeds the masses!
Simple Southwest Salad
Ingredients:
1 bag of spinach
1 bag of romaine lettuce
1 can of corn, drained
1 can of black beans, rinsed and drained
1/2 can of olives chopped
1/2 cup shredded mozzarella cheese
1 tomato chopped
1 avocado chopped
1/4 cup of sliced almonds (optional)
Directions:
Throw all ingredients together in a large bowl and mix well. Serve with your favorite dressing.
