2 Ingredient Cheesy Queso Dip

This is one of my family's favorite appetizers/side dishes. When we were growing up, my mom would always make this for our family New Year's Eve party and when I asked my mom for the recipe, I had no idea that it only consisted of two ingredients!
It's quick, easy, and delicious . . . my pre-requisites for a great recipe!

2 Ingredient Cheesy Queso Dip
Ingredients:
1 (10 oz) can diced tomatoes and green chilis, undrained (I usually use Ro-Tel brand)
1 (16 oz) package Velveeta cheese, cut into cubes

Directions:
Combine undrained tomatoes and cheese in medium saucepan.
Cook over medium heat for 5 minutes or until cheese is completely melted and mixture is well-blended, stirring frequently.
Serve warm as a dip with tortilla chips or crackers.

    I always add a can of cream of mushroom soup to the batch…it keeps the velveeta from lumping up and doesn’t affect the flavor. It also makes it go a little farther. of course you can add beef, bacon, or spinach too :)
