This is a family favorite that always seems to turn out great! These cookies are so soft and fluffy. The best part is, you probably have all the ingredients to make them in your pantry just waiting for you!
(Makes about 3 dozen cookies)
1 cup (2 sticks) butter or margarine (room temperature)
1 cup brown sugar
1 cup granulated sugar
1 1/2 cups peanut butter (creamy or chunky)
3 cups all purpose flour
1 teaspoon baking soda
1 teaspoon vanilla extract
Additional granulated sugar (for rolling cookie dough in)
Mix butter, sugar and peanut butter together. Add eggs, flour, baking soda and vanilla extract. Roll dough into 1 inch (or a little larger) balls, roll in sugar, place on ungreased cookie sheet and use a fork to make a criss-cross design on top.
Bake at 350°F for about 12 minutes or until golden brown.
