Healthy Meals Monday: Chicken Crepes with Mushroom Sauce

I've been craving crepes and I wanted to try a different way of eating them. I found this amazing recipe at cooks.com and I LOVED it!!! The picture doesn't give this meal justice. You could easily make this meal with tortillas but my family loved the taste of the crepes.

Chicken Crepes with Mushroom Sauce Recipe:

Crepes:
1 1/3 cup milk
2 tablespoons of vegetable oil
1 1/3 cup flour
4 eggs beaten
1 teaspoon salt

Mix well. Pour 3 Tablespoons batter into pan that has been sprayed with Pam (or nonstick cooking spray).

Chicken Filling:
2 cans condensed cream of chicken soup
8 oz of fat free sour cream
2 1/2 cups cooked chicken

Combine cream of chicken soup and sour cream. Split in half. Combine one half of the mixture with the chicken and reserve the rest.

Mushroom Sauce:
2 tablespoons melted butter
1 small chopped onion
Diced bell peppers (optional)
Reserved soup mix
1/2 cup cheddar cheese
1 cube chicken bouillon
2 tablespoons water
1 can of sliced mushrooms

Line crepes with filling. Roll up and place in pan like enchiladas. Pour sauce over top. Bake 15 minutes at 350 degrees. Sprinkle top with grated cheddar cheese and return to oven for 10 minutes. bake covered with foil.

    Would you please clarify how much onion I should expect a small chopped onion to yield? (tablespoons/measuring cups). Also, what size can for the mushrooms? Thank you—–looks delicious. I have never made crepes. I guess I am suppose to cook them like a pancake?

      Hi Cece!
      It really depends on the size of your onion and if you like onions or not. We used the whole onion becaue we love them! Anywhere from 1/2 cup to 3/4 cup of onion. If you don’t like them much just use 3 Tablespoons or none at all. I also used the big size can of mushrooms because we love them too! (there are 2 sizes of canned mushrooms)
      For the crepes… when you put them in your pan… try and spread them as thin as possible. Cook about 3 minutes flip and cook for about 1 more minute. Hope this answers your questions!

    This looks delicious! For the chicken bouillon, do you dissolve it in the 2 Tbs. water? There aren’t any instructions for the sauce.
