Healthy Meals Monday: Baked Mexican Fish

We are MOVING in one week and I’m trying to use all the halibut in our freezer so we don’t have to bring it with us.  I was sick of all our halibut recipes so I decided to try a new one. When my husband came home he yelled… “It smells so good!” I always know that is a good sign.  One thing I love about Halibut is that if you cook it the right way it tastes like chicken instead of fish. My kids loved this “chicken” meal. :)

1 1/2 pounds cod or halibut
1 cup salsa (however spicy you want it)
1 cup lowfat shredded Cheddar cheese
1/2 cup coarsely crushed corn chips
1 avocado – peeled, pitted and sliced
1/4 cup light sour cream
black beans
warm tortillas

Preheat oven to 400 degrees F (200 degrees C). Lightly grease a baking dish.
Rinse fish fillets under cold water, and pat dry with paper towels. Lay fillets side by side in the prepared baking dish. Pour the salsa over the top, and sprinkle evenly with the shredded cheese. Top with the crushed corn chips.
Bake, uncovered, in the preheated oven for 15 minutes, or until fish is opaque and flakes with a fork. Serve with tortillas, sliced avocado, sour cream, and black beans.
