Chocolate Raspberry Brownie Parfaits

 

With only three ingredients, this dessert could not be any easier! Raspberries were WAY on sale at the grocery store this past week and so I bought some, not knowing what I would do with them. There are so many yummy raspberry desserts out there, but I was craving something rich and chocolatey.
I whipped up a box of brownies (or you could be domestic and make your favorite from-scratch brownies) and a box of instant chocolate pudding. Once the brownies cooled, I layered them with the pudding and fresh raspberries in our fancy goblets (the kids thought it was so cool to eat out of fancy cups!) and it was the perfect summer dessert. 
Quick, easy, and delicious . . . my favorite things. :)

Chocolate Raspberry Brownie Parfaits
Ingredients:
1 box brownie mix (or you can make your favorite homemade brownies)
1 large box (6 oz) chocolate instant pudding
2 cups fresh raspberries

Directions:
Prepare brownies according to directions on box. Bake in a 9x13" pan as directed. Let cool completely. Once cooled, cut into small bite-sized pieces.
Prepare instant pudding as directed on box. 
Wash raspberries.
Layer brownies, pudding, and raspberries in glass or plastic cups (remember the plastic cups I used to make Individual Seven Layer Dips? Those cups work perfect for this!). 
I was able to make 8 (8oz) servings, but it just depends how big your cups are and how many layers you put in each cup. 

*I suggest making these and eating them immediately, otherwise the brownies start to get really soft (I thought the soft brownies were yummy, but my husband preferred them to be more fresh and chewy).
