I am always looking for new recipes to try in my slow cooker (if you haven't noticed by now, I am totally addicted to my slow cooker!) and so when I was asked to test one of the recipes on the new Coke with Meals site, I looked for something that would work perfectly in the slow cooker.
I ended up choosing a Coca-Cola (R) BBQ sauce recipe from Chef G. Garvin and adapted it to my tastes, then poured it over a roast and let it cook in a slow cooker all day.
The roast ended up being so tender and moist and it basically fell apart when I pulled it out of the slow cooker! My whole family loved it . . . who knew that cooking with Coke would produce such delicious results?
Slow Cooker Coca-Cola BBQ Roast Beef
1 (2-3 pound) beef rump roast
1/2 cup Coca-Cola
1/2 cup brown sugar
1/2 cup orange juice
1/2 cup molasses
2 cups ketchup
2 Tablespoons diced garlic
1 Tablespoon liquid smoke
1 tsp garlic salt
Dash of red pepper flakes
Spray slow cooker with non-stick cooking spray. Place roast in slow cooker. Mix remaining ingredients in a bowl and pour over roast in the slow cooker. Cook on low for 8-9 hours or high for 5 hours. When finished, slice roast (if you can . . . mine was so tender it just fell apart) and pour extra sauce on top.
