Strawberry Chocolate Banana Baked Oatmeal Recipe

We very rarely had a cooked breakfast during the week when we were growing up.  It is a miracle my mom could get all 6 of us out the door with “poofed” bangs and clothes that matched!  We were, and still are, a cold cereal family.  I am just not enough of a morning person to get up and cook everyone breakfast, unless I find something so easy and delicious I can’t pass it up.  This recipe is really simple to throw together and tastes amazing!  Definitely a home cooked breakfast you could even throw together on a busy weekday!

Strawberry Chocolate Banana Baked Oatmeal Recipe:
Ingredients:
2 cups old fashioned rolled oats
1/3 cup light brown sugar
1 teaspoon baking powder
1 tablespoon grated orange zest
1 teaspoon cinnamon
1/2 teaspoon salt
1 cup sliced strawberries
1/3 cup semi-sweet chocolate chips
2 cups milk
1 large egg
3 tablespoons butter, melted
2 teaspoons vanilla extract
1 ripe banana, peeled, 1/2-inch slices

Directions:

Preheat oven to 375°F and generously spray the inside of a 10-1/2 by 7 inch baking dish with cooking spray and place on a baking sheet (in case of boil over).
In a large bowl, mix together the oats, sugar, baking powder, orange zest, cinnamon, salt,  half the strawberries and half the chocolate. (Save the other half of strawberries and chocolate for the top of the oatmeal). In another large bowl, whisk together the milk, egg, butter and vanilla extract.
Add the oat mixture to prepared baking dish. Arrange the remaining strawberries and chocolate on top. Add the banana slices to the top then pour the milk mixture over everything. Gently shimmy/shake the baking dish to help the milk mixture go throughout the oats.
Bake 35 to 40 minutes or until the top is nicely golden brown and the milk mixture has set. For an extra tasty top, sprinkle a tablespoon or so of extra brown sugar on top then place back in the oven under the broiler and broil for 20-30 seconds. Serve warm with an extra sprinkle of sugar or drizzle of maple syrup.

    I’ve been trying a lot of baked oatmeal recipes and we weren’t really crazy about any of them. This one looks so good! How can you go wrong with chocolate and fruit? Trying this one soong, thanks! -Kelly @ Semi Homemade Mom

    There’s no mention of Chinese five spice in the ingredients but it’s in the Directions. Is that supposed to be cinnamon? Also the directions mention walnuts but they’re not in the ingredients list. How much do you use? Sorry, not trying to nitpick, just want to make sure I know what all is in there. :)

    Could this be made ahead and just baked before serving? If so. how long until it would get gross and mushy? We are taking a beach trip and I like to make things ahead to bring with us. Thanks!

      Hi Alison, you can mix all of the ingredients for this baked oatmeal recipe the night before cooking and then bake in the morning. If you do this, place bananas on the bottom of the dish and not on top of the oats since they may brown slightly over night.
      Some readers have tried freezing the oatmeal: After mixing everything together, tightly cover the oatmeal or pour into resealable plastic bags and freeze for up to one month. Then, when you want to bake the oatmeal, just remove from freezer, thaw and bake as directed. If you decide to do this, we suggest that you mix the fruit into the oatmeal instead of placing on top to prevent browning – especially the bananas. Hope this helps!
