Healthy Meals Monday: Creamy Chicken Broccoli Casserole Recipe

My husband loves a good casserole.  Whenever I ask what he wants for dinner, he always rattles off names of casseroles his mom would make growing up.  We threw this one into the rotation and he loved it!  Nothing beats being able to throw a casserole together in the morning then pop it in the oven before dinner.
This recipe was so easy and my whole family enjoyed it!  It is creamy enough that you could serve it over pasta!

Creamy Chicken Broccoli Casserole Recipe:
4-5 chicken breasts
1 bag frozen broccoli
2 (8 oz.) boxes of cream cheese (you can use Neufchatel or Fat Free)
2 cups milk
2 tsp. garlic salt
3/4 cup Parmesan cheese
Ritz cracker crumbs for topping
Cook the chicken, then slice or break it into bite size pieces.  Cook broccoli in salted water.  Place the broccoli in a 9×13 greased casserole dish.  Heat the milk, cream cheese, garlic salt and Parmesan cheese over low heat, stirring till the mixture is smooth.  Pour 1 cup of sauce over the broccoli.  Now add the chicken into the pan and pour rest of sauce over it.  Sprinkle the top with 1/4 cup Parmesan cheese and Ritz cracker crumbs.
Bake at 350 degrees for 25 to 30 minutes.  (Note: watch the sauce while baking, it can get too hot and burn on top!)

    Just made this for dinner with a few of my own tweaks… I love adding nutmeg just a pinch to any cream sauce and I through in Mushrooms and onions I sauteed with the chicken. Oh and I didn’t have crackers so I used panko crumbs. serving it with jasmine rice

      We ususally just boil the chicken breast and then dice it up into small bite sized pieces. When we are really cramped for time we will buy a rotisserie chicken. You could even grill it outside or on some type of indoor grilling a George Foreman Grill. Whatever works. Boiling is usually the easiest.

      We have only made this recipe in the oven. You could probably cook it in the microwave so it’s all heated through. We don’t have any instructions for microwave cooking on this recipe. Let us know how it all turns out!
