Healthy Meals Monday: Creamy Chicken Broccoli Casserole Recipe

My husband loves a good casserole. Whenever I ask what he wants for dinner, he always rattles off names of casseroles his mom would make growing up. We threw this one into the rotation and he loved it! Nothing beats being able to throw a casserole together in the morning then pop it in the oven before dinner.
This recipe was so easy and my whole family enjoyed it! It is creamy enough that you could serve it over pasta!
Creamy Chicken Broccoli Casserole Recipe:
Ingredients:
4-5 chicken breasts
1 bag frozen broccoli
2 (8 oz.) boxes of cream cheese (you can use Neufchatel or Fat Free)
2 cups milk
2 tsp. garlic salt
3/4 cup Parmesan cheese
Ritz cracker crumbs for topping
Directions:
Cook the chicken, then slice or break it into bite size pieces. Cook broccoli in salted water. Place the broccoli in a 9×13 greased casserole dish. Heat the milk, cream cheese, garlic salt and Parmesan cheese over low heat, stirring till the mixture is smooth. Pour 1 cup of sauce over the broccoli. Now add the chicken into the pan and pour rest of sauce over it. Sprinkle the top with 1/4 cup Parmesan cheese and Ritz cracker crumbs.
Bake at 350 degrees for 25 to 30 minutes. (Note: watch the sauce while baking, it can get too hot and burn on top!)

Yummy, this sounds tasty! I make a casserole very similar to this and it’s quick, easy, and delicious. I will have to try this one out:)
Just made this for dinner with a few of my own tweaks… I love adding nutmeg just a pinch to any cream sauce and I through in Mushrooms and onions I sauteed with the chicken. Oh and I didn’t have crackers so I used panko crumbs. serving it with jasmine rice
How did it turn out with the Panko? I ran out of crackers yesterday but have panko.
I’m making this one soon. I love casseroles that don’t call for cream of something soups. Can’t wait to try it!

Do you know nutritional info on this recipe? I know it says healthy, but I am following Weight Watchers and was curious the stats for my tracking.

what size bag of frozen broccoli?
It comes in 10 and 16 ounce bags. We like broccoli, so we used the 16 ounce bag.
