Strawberry Valentine Oreo Cookies Recipe

Join us on Facebook and Twitter for our latest recipes and projects!

I'm the only girl in my house which means we don't see much of the color pink, so when Valentine's Day rolls around I finally have an excuse to bake and decorate with pink!
What could be better than pink cookies?!

Strawberry Valentine Oreo Cookies Recipe:
(Recipe adapted from 30 Handmade Days)

Ingredients:
Cookies:
1 package of strawberry cake mix
2 eggs
3/4 cup of shortening

Frosting:
8 oz. cream cheese, room temperature
1/2 stick of butter, softened
2 tsp. vanilla
4 c. powdered sugar

Instructions:
Preheat oven to 350 degrees.

Mix together strawberry cake mix, eggs and shortening until well combined. The dough will be pretty thick. Roll dough into balls, making sure they are all similar in size. Place dough onto ungreased cookie sheet and bake for 8 minutes. Immediately transfer cookies to a cooking rack.

Mix together cream cheese, butter, vanilla and powdered sugar until smooth. Spread onto cooled cookies and sandwich together.

*Makes 12-15 cookies after they are sandwiched together

  5. Just a question. I'm interested in making these, and I LOVE cream cheese, but for those who might not like cream cheese frosting, do you happen to have alternative suggestions for the filling? Would regular store bought frosting work? Just curious!

  6. What kind of shortening did you use? These look lucious and want to make them. I like cake mix cookies, too.

You have a great web site. Thanks!

  7. @Dianne,

I just used regular vegetable shortening. Thanks!

  8. @Renee,

I think vanilla store bought frosting would be great or here is a link to homemade frosting that would be good, too.

  15. I followed the recipe exactly and my batter was way too soft and gooey to form into balls! Has anyone else actually tried following this recipe? Did I do something wrong??? Too bad, it looked good.

  18. @riabeth,

Just use the cake mix, eggs and shortening. You can ignore what is on the box! :)

  20. I used butter instead of shortening. My batter was very gooey and sticky, but I just used plenty of flour on my hands. However, I ended up with half my frosting left over! Unless you want tons of frosting in your cookies, halve that part of the recipe!

  21. Just tried these (found them on pinterest) and they are delicious! Thanks for the idea!! I did put a little less shortening, but added a tablespoon or so of milk. Yum!

  22. I just made these and they are so cute! I'm wondering, because the frosting is made with butter and cheese do I have to refrigerate the cookies?

  23. @Erika,

I haven't eve kept them in the fridge so they'll be okay either way!

  24. Since I had leftover frosting from my original bath, I decided to make chocolate ones. I used devil's food cake mix, since that's what I already had. At first, I wasn't sure how they would turn out. I ended up cooking the balls for 11 minutes at 350, then flattening them out right after they came out of the oven. They ended up firming up better than the strawberry ones which made it easier to spread the frosting, but they are still super soft when you eat them. They ended up being a winner!

  25. they look great! question - can i use butter or oil instead of the shortening?

    ReplyDelete
  26. Oil would make a really flat cookie. You could try butter just at room temperature, don't melt it. Shortening works the best, just not the healthiest option. Hope this helps. -The Six Sisters

  32. I'm not big on Valentines day (maybe because my birthday is so close?) but these are getting me excited! Hooray for Pinterest. :)

  33. I am finding that 8 minutes is definitely not enough time for these to bake through. I'm making them now and have to put them back in the oven for the third time for a total of at least 15 minutes.

  34. Just got done making these, and you could definitely cut the 4 cups of sugar in the frosting to two! Yowza super-sweet, but gooooood!
