Valentine’s Day Neapolitan Cupcakes Recipe

Strawberry cake PLUS brownie batter?
Seriously- it’s one of the most delicious cupcake combinations I have had!
The colors are so cute for Valentine’s day . . .
These would be perfect for any Valentine’s party or no occasion at all.
And trust me- anyone could make these! They are easy to throw together in no time at all.
Valentine Neapolitan Cupcakes

Ingredients
- 1 (19.5 ounce) package brownie mix
- 2 eggs
- 1/2 cup vegetable oil (you could also use canola oil)
- 1/4 cup water
- 1 (18.25 ounce) package strawberry cake mix (or any flavor you want)
- 2 tablespoons vegetable oil (you could also use canola oil)
- 1 1/3 cups water
- 3 egg whites
Directions
- Preheat an oven to 350 degrees F (175 degrees C). Line 40-48 muffin cups with paper liners (I only got about 40 cupcakes, but you may get more).
- Whisk together the brownie mix, 2 eggs, 1/2 cup canola oil, and 1/4 cup water in a bowl. Stir just until fully incorporated, about 50 strokes; set aside.
- Mix the cake mix, 2 tablespoons canola oil, 1 1/3 cup water, and 3 egg whites in a large bowl with an electric mixer on low speed until combined. Mix on medium speed for 2 minutes.
- Spoon the brownie batter into prepared muffin cups, filling each cup 1/3 full. Spoon the cake batter over the brownie batter, until muffin cups are each 2/3 full.
- Bake in the preheated oven until golden and the tops spring back when lightly pressed, about 20 minutes.
I topped the cupcakes with our Perfect Buttercream Frosting and chocolate sprinkles.

I saw these on Pinterest several weeks ago and made them. I too posted them on my blog as I baked them in little ice cream cups for cuteness and easy travel. They are as delicious as they look! I think I actually like them without the frosting better. Everyone should make these!
I tried this recipe, but I had to bake them a tad bit longer because they came out liquidy (the brownie part). However, even after baking them a few minutes longer, the brownie is still a bit gooey. (I am NOT a brownie baker and hardly eat them, but a colleague made this recipe, and I LOVED it.) Should I be concerned with this?
These were wonderful. My daughter and I baked a batch this week for her staff at work. They were gone in 15minutes. We look forward trying more of your recipes.
I am wondering if anyone has tried this recipe in a bundt pan…with baking the strawberry on the bottom, so that when put on a plate it would be on top? I am a little worried about trying it for a party since the brownie batter is thicker, thinking it might not work right pouring it on top of the strawberry. Would appreciate any input. Thanks.
