My husband is in Medical School right now and is HUGE into eating healthy. He is always helping me find new meals and telling me facts about being healthy that he learns from school.
This is a recipe that my husband Ammon found and it is delicious! Happy eating!
6 skinless, boneless chicken breast halves
ground black pepper to taste
1 teaspoon garlic salt
2 tablespoons olive oil
1 onion, thinly sliced
1/2 cup balsamic vinegar
1 (14.5 ounce) can diced tomatoes
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon dried rosemary
1/2 teaspoon dried thyme
Brown Rice or Wheat Noodles
Mozzarella Cheese to sprinkle on top (optional)
Season chicken breasts with ground black pepper and garlic salt. Heat olive oil in a medium skillet, and brown the onion and seasoned chicken breasts.
Pour tomatoes and balsamic vinegar over chicken, and season with basil, oregano, rosemary and thyme. Simmer until chicken is no longer pink and the juices run clear, about 15 minutes. Put over brown rice or wheat noodles. Then sprinkle Cheese on top.

I have some extra balsamic vinegar I had saved from another recipe and wasn’t sure what to make with it. This recipe sure sounds yummy and healthy!

I just made this tonight! I did make a few changes-since it is summer and I have access to fresh herbs and tomatoes, but it was delicious! Thanks for sharing!

Have you ever tried this in a slow cooker? I have this on my menu for tomorrow night but I was thinking of trying it in the slow cooker. Let me know if you’ve tried it and if it worked out or not! Thanks!
