Heathly Meals Monday: Weight Watchers Stuffed Green Peppers

We love Green peppers in our family and they aren’t very expensive right now in the grocery store! This is one of my favorite recipes when I’m craving the pepper!
Ingredients:
- 1 cup (part Skim) mozzarella cheese
- 2 tsp table salt
- 2 Tbsp onion (I added 1/2 an onion because we LOVE them)
- 15 oz canned tomato sauce
- 5 cups water
- 1/2 tsp garlic salt
- 1 pound lean ground turkey
- 1 cup quick cooking brown rice
- 6 large bell peppers
Instructions:
Cut off top of pepper, clean out seeds and membranes and then wash them good. Cook peppers in the boiling salt water for 5 minutes then drain.
Cook and stir ground Turkey and onion until onion is tender. Drain off any fat. Stir in salt, garlic salt, rice and 1 cup (8 oz) of tomato sauce. Heat through.
Stuff each pepper with meat mixture. Stand the peppers upright in an ungreased backing dish. Pour remaining tomato sauce over peppers. Bake 350 degrees for 30 minutes covered, then uncover top with shredded part-skim mozzarella cheese and bake an additional 15 minutes.
Serving size is 1 stuffed green pepper.
