Heathly Meals Monday: Soft Whole Wheat Blender Waffles


I love breakfast food! But my husband leaves every morning around 6 am and I usually don't wake up that early to cook for him. Instead we have breakfast for dinner (a.k.a. brinner!). My friend introduced me to this recipe for whole wheat waffles. We tried them and my enitre family LOVED them!

Whole Wheat Blender Waffles
1 cup whole wheat white berries (not the flour, just the berries)
1 1/2 cups milk
2 eggs
1 tsp sugar
1 Tablespoon baking powder
1/4 cup oil
3/4 tsp salt

Put wheat berries and one cup of milk into blender. Blend on high 3 minutes. Add 1/2 cup milk and blend additional 2 minutes. Add remaining ingredients- blend quick- and cook on hot waffle iron until golden brown (these may also be cooked on griddle as pancakes).
These are what the Wheat Berries look like. Don't be scared off by the berries. They taste DELICIOUS and are so good for you!

  3. Yikes!!!!! Thank you for your comment! it is 3/4 tsp Salt! Can you imagine 3/4 cup salt! Just the thought of it makes me sick! Thanks!
