{Quick and Easy} Lasagna Soup


I love soup . . . but the only way that I can get my husband to eat soup as a main course is to make it really hearty. This soup is loaded with veggies and flavor and is ready in less than 30 minutes. We paired it with 30 Minute Rolls and it was a fast and delicious meal!

1 lb Italian ground sausage
1/2 cup onion, chopped
1 package Lasagna Hamburger Helper
5 cups water
2 cans corn (undrained)
2 cans (14 oz each) diced tomatoes (undrained)
2 Tablespoons grated Parmesan cheese
3 small zucchinis, chopped

Brown sausage with onion and drain. Add lasagna sauce mix (don't add the noodles yet!), water, tomatoes, corn, and cheese. Bring to a boil and reduce heat. Cover and simmer for 10 minutes. Add noodles and zucchini. Cook 10 more minutes or until zucchini is done. Serve with shredded Parmesan cheese.

  1. We loved it! I used hamburger instead of sausage, shredded chicken would be great.

  2. This was a really good soup although turned out to be more of a stew to me...perhaps I was using different proportions of things. Either way...it was amazing. Used ground turkey instead of italian sausage and used basil, garlic powder, dehydrated onions (along with fresh) a HEAPING tsp from my giant costco sized minced garlic (LOVE LOVE LOVE) and S&P to spice things up. You must be taking about using the small sized corn cans (2 servings) because using two of the family sized ones (3-4 servings) was ALOT of corn. I love corn but next time I make this...I'll probably just use one can. Also...I'm in cananda...and the large sized can of tomatoes (796ml) for any other canucks out there was plenty!

    I can't wait to try this with different flavoured 'helpers'....this is a fantastic idea and seasons your soup base PERFECTLY!
