

I have been in Utah for the last 2 weeks so before I left I made lots of freezer meals for my husband. One that was super easy is this frozen chicken and vegetable dinner:
1 sweet potato -peeled and sliced
1 zucchini - sliced
1 banana squash- sliced
1/3 onion - sliced
Place all ingredients in Ziploc bag and put it in the freezer until you are ready to use it.
To Cook:
Using a large skillet pan, place on stove top and turn on heat to medium high. Add 1 Tablespoon of Extra Virgin Olive Oil to the skillet. Wait until oil is hot then add your vegetables. Cook until the vegetables are soft.
Remove vegetables from skillet. Then add 1 chicken breast (cubed) to the skillet and saute until no longer pink.
While chicken was cooking I made 1 cup of brown minute rice in the microwave.
Once chicken and rice are done, add everything to the skillet along with a package of Lipton Onion Soup mix and 1/3 cup of water. Saute until most of the water has cooked out. Enjoy!
This would probably feed 2 people (or one hungry husband), so adjust as necessary!




















Is a banana squash just a yellow squash - like, a yellow zucchini?
ReplyDeleteHi Kelly! A banana squash is a type of yellow squash (I guess that there a couple of different kinds! Who knew?) and it would work perfect for this recipe!
ReplyDeleteBanana squash is a huge squash that they usually cut up and sell in saran wrap in the produce section of the store.
