This really isn't a recipe . . . it's more of an idea. :) But this is one my family's favorite ways to enjoy zucchini!
Ingedients:
-zucchini (as much or as little as you want), cut into spears (you want them to all be about the same size and thickness)
-olive oil
-seasonings (we love garlic salt, seasoned salt, and onion powder or sometimes we will use crushed garlic and sea salt. . . but really, anything goes!)
**I have also heard that it is delicious to marinate your zucchini in Italian salad dressing for a couple of hours and then grill it! I am trying that next!)
Put zucchini spears into large bowl. Drizzle with olive oil. Sprinkle seasonings on top and mix with hands until all spears are coated. Spray grill with non-stick cooking spray. Grill zucchini over medium-high heat for just a couple of minutes (about 5), then turn over and grill for about 3 more minutes. The zucchini is done when the outside is slightly charred and the zucchini is softened, but it still keeps it's shape.

yum! the marinated stuff is really good but yours sounds tasty too!
ReplyDeleteI am a Zucchini addict and can't wait to make some this way. I haven't grilled any all summer (because of a burn ban) but hopefully now that it is cooling off I can.
