Grilled Zucchini

Ingedients:
-zucchini (as much or as little as you want), cut into spears (you want them to all be about the same size and thickness)
-olive oil
-seasonings (we love garlic salt, seasoned salt, and onion powder or sometimes we will use crushed garlic and sea salt. . . but really, anything goes!)
**I have also heard that it is delicious to marinate your zucchini in Italian salad dressing for a couple of hours and then grill it! I am trying that next!)
Put zucchini spears into large bowl. Drizzle with olive oil. Sprinkle seasonings on top and mix with hands until all spears are coated. Spray grill with non-stick cooking spray. Grill zucchini over medium-high heat for just a couple of minutes (about 5), then turn over and grill for about 3 more minutes. The zucchini is done when the outside is slightly charred and the zucchini is softened, but it still keeps it’s shape.

I am a Zucchini addict and can’t wait to make some this way. I haven’t grilled any all summer (because of a burn ban) but hopefully now that it is cooling off I can.

Try marinating in a balsalmic vinagrette dressing. YUM!!
I tried these with a little Italian seasoning, garlic powder and onion power. There were no left overs.
