{FROZEN} Chocolate & Peanut Butter Banana Bites

I think that I have an addiction to chocolate. Actually, I know I do. I will basically eat it in any form . . . and not a day goes by that I don't eat it. I don't feel as guilty eating these banana bites (at least I tell myself that!) because they are a fruit, right?! RIGHT? :) Oh well, healthy or not, this is my favorite way to eat bananas. :)

-3 large bananas
-1/2 cup chocolate chips (either semi-sweet or milk chocolate)
-1/2 cup peanut butter (I used creamy, but crunchy would work too! It would just have chunks in it . . . obviously)
-Toppings (optional)- I used crushed peanuts and coconut . . . but anything goes!

  1. Set out a pan (I used a small cookie sheet) with a piece of wax paper on it.
  2. Cut up the bananas into good-sized chunks. Each banana should give you around 6-8 pieces.
  3. Heat the peanut butter and chocolate chips in the microwave on high for about a minute. Then stir until smooth.
  4. Dip the banana pieces in the chocolate-peanut butter mixture. Lay them out leaving some space between them on the parchment/wax paper. Then when you've "covered" them all, use the remaining mixture to spoon over the tops (for even more chocolate-y goodness).
  5. Top with toppings (if you want them!). Transfer to the freezer for about an hour until hardened.
  6. You can enjoy them like this (but they really aren't frozen yet -- and when they're frozen, the banana tastes like vanilla ice cream) . . . I suggest then covering with some plastic wrap (or in a Tupperware/Rubbermaid container) and let freeze overnight.
Recipe adapted from (never home)maker.

  4. Thanks so much for stopping by my blog! I must have joined one or they kept my name from last week. I have been a little under the weather for a few days so haven't been on the computer much this week. I followed you back thru GFC and would have followed on FB but 2 Friday's ago I joined a FB only blog hop and I was just zipping away at "liking" everyone and asking to be "liked" back and all of a sudden FB popped up a box saying I was being suspended for 15 days for spamming!! I tried in vain to email them to appeal but they won't answer me back. I told them we all signed up for that hop so everyone had permission to just go to the ones that signed up. Haven't heard a word from them and I just tried to get on my FB page and it still says disabled. God, I hope they don't forget to take the ban off. I have been keeping a list of the bloggers who followed me on FB and when I can I will follow everyone back a little at a time and will only post on the blogger's blog that I followed them. I will never leave a comment again on FB for any kind of hop! I have lost so many entries because I can't say I followed the sponsor of a contest nor can I just click the "like" the post button! I don't know if you followed on FB or not so if you did please let me know so I can add you to my list to follow. Thanks so much and have a great weekend.

  9. HI, I just tried this recipe, but since i do not have a microwave, i heat the chocolate chips and peanut butter with my stove instead, and stir it to smooth. I'm not sure what i did wrong here, but seems the chocolate and peanut butter mixture are not smooth and watery enough for the banana to dip in. The mixture is just too dry. What should i do?
