These have got to be the easiest cookies I have ever made . . . and they are absolutely delicious! One of the mom's from Brynlee's preschool class gave me this recipe. It's crazy because they have no eggs or oil, but they are full of flavor and incredibly moist. They are easy to throw together (took less than 5 minutes) and they make your house smell so good while they bake!
Ingredients:
1 box spice cake mix
1 15 oz can pumpkin puree
1/2 cup mini chocolate chips
Preheat oven to 350 degrees. Mix all three ingredients together, roll into small balls and place on cookie sheet (or I have heard that you can make muffins using this recipe). Bake for 8-10 minutes (depending on how small or large you make your cookies).
