3 Ingredient Pumpkin Chocolate Chip Cookies

These have got to be the easiest cookies I have ever made . . . and they are absolutely delicious! One of the mom’s from Brynlee’s preschool class gave me this recipe. It’s crazy because they have no eggs or oil, but they are full of flavor and incredibly moist. They are easy to throw together (took less than 5 minutes) and they make your house smell so good while they bake!
1 box spice cake mix
1 15 oz can pumpkin puree
1/2 cup mini chocolate chips

Preheat oven to 350 degrees. Mix all three ingredients together, roll into small balls and place on cookie sheet (or I have heard that you can make muffins using this recipe). Bake for 8-10 minutes (depending on how small or large you make your cookies).
Makes about 24 cookies

Just wanted to let you know that over at createlive, we’re just finishing up a pumpkin recipe series called “The 12 Days of Pumpkins.” For the next few days, we’ll be hosting a link-up, featuring any recipes involving pumpkin, and will be choosing a good number of these recipes to have their own page (which can include your blog name and URL!) in a pumpkin cookbook! Just thought you might be interested in the additional press or being included in a cookbook – and this is a really great recipe! Find the link up here!
    Have a great one :)

Thinking that the cops would like this for Laconia Bike Week next week (the NH Veterans Association hosts the breakroom they use during that time and we bake for them). I like this, it looks different and very tasty.
