Rolo Cookies

My college roommate, Mandy, would make these cookies all the time!  They are so easy and sooooo good.  Plus, they only have 4 ingredients!


1 pkg. Rolo's
1 box Devils Food Cake mix
2 eggs
1/3 c. oil

Mix cake mix, oil, and eggs. Take a small ball of dough and form a ball around the rolo. (Only use enough dough to cover the rolo so it can spread through the cookie.)

Place on greased cookie sheet and bake at 350 for 7-8 minutes. Yields about 3 dozen.

Sprinkle with powdered sugar, if desired.

  15. made these after seeing them on pintrest today.. used swiss chocolate cake.. i think they wouldve turned out amazing if i didnt make them a) so huge, and b) on a proper pan hahaha! mine never set up :( but ill probably try this again

  25. Ok... I found these on pinterest and attempted to make them for Halloween.... the dough was so sticky and I couldn't get it to roll into a ball or go around the rolo.... now I'm not the best in the kitchen but I can follow a recipe.... help :)

    You can put the dough in the fridge and it will set up a little better, or you can spray cooking spray on your hands so the dough doesn't stick. Hope this helps!

I love that these cookies are chewy on the inside (the rollo surprise is an added bonus!) and who doesn't love a four-ingredient recipe?? Thanks for posting, these will be great (and stress-free) cookies to make for the holidays!

  30. I found them on pinterest too. I used a small cookie scoop, filled with batter, pushed the rolo into it and folder the bottom edges over. Worked wonderfully and very easy. The girls at work loved them.

  31. HOLY COW!! I just made these and they are phenomenal, so easy and cheap anyone can do it. You HAVE to sprinkle powdered sugar on top because it makes a world of a difference. These will be my go to cookie recipes from now on. Thank you so much.

    I have never tried to freeze them but I'm sure it would be fine! I've also eaten them a few days after making them and they are still soft and moist. Good luck!

  39. I'm not sure what I did wrong but the 'dough' was so thick it wouldn't let go of my fingers AND wouldn't stick to the Rolos. Thankfully, my really attentive and creative Dad suggested using a melon baller. I scooped a little less than a full scoop worth of dough, pressed a Rolo into the center and folded the excess dough over the bottom of the Rolo. They came out great! Thanks!

  40. I tried making these for Xmas cookies& my was like cake batter, I couldn't even form a ball & I also left it in the refrigerate to have it harden up!! I follow the recipe! But made a double batch! Tell me what I did wrong !?? It wasn't dough texture at all !! Help !! These look good

  45. These were awesome. Also for the one who's dough git stuck to fingers. Try rubbing your fingers on crisco. Think chap stick for your fingers. Or try flour. Not much of either.

  46. Love these! Just made them and they turned out so great! I followed the instructions exactly and had no problem with the sticking except at the end when the dough was getting warmer and my fingers were getting stickier with dough. Would recommend these to anyone!

    Today I put a dab of peanut butter and marshmallow creme on each rolo, then sprinkled each cookie with a pinch of sea salt. Tres fantastique!! Much love. --Z

  50. @Anonymous- no worries! Just completely IGNORE the directions on the cake mix box. Only use the eggs and oil that we call for in our recipe and they will turn out great. :)

  57. Ok I made these as directed, but my batter was SOOOO sticky I couldn't roll it for nothing. I wonder if it makes a difference what cake batter you get, I noticed I bought betty crocker devil's food cake mix super moist think that might be why it was so sticky? And when I baked them I baked them for the full 8mins let them cool because they fell apart and after they cooled the middle literally stuck to the pan while the edges pulled off- did I not cook them long enough?

    I've never had that problem. I would try letting the dough set up more in the fridge before cooking them. That might help the dough be less sticky. You can also spray your hands with cooking spray to making them easier to roll. Hope that helps!

  59. These are the best cookies I make them pretty much every week for my husbands Marines and they eat them in about 5 minutes no joke. Also my son's teacher's got them for Valentines day added a peanut butter m&m on the top after I baked them and my husband liked them even more with the peanut butter chocolate M&M on top. Super easy and cheap to make since I bake something for his Marines every week. And I put mine in a plastic covered tupperware to keep from drying out even though they last maybe a day anyway they are too good to keep for longer! And reheat them if we have any left over before I eat them so I get warm caramel again!
