Sweet Potato Apple Bake




 
As a family we are trying to eat more Veggies... and I'll be honest... sometimes I get really sick of the same old stuff. So I experimented a bit and ended up with this! If you love sweet potatoes you will LOVE this!

Sweet Potato Apple Bake

4 to 6 Large Sweet Potatoes or Yams
2 to 3 Large Granny Smith apples
3/4 cup of cranberry flavored Craisins

Cut your sweet potatoes in half and boil in water until tender
After they are done boiling, peel and slice them up. (I did mine in circle shapes)

Lay them in a 9x13 pan

Next peel your apples and slice them up and lay them on top of the sweet potatoes

Last sprinkle the cranberries on top.

The Sauce:
4 Tablespoons of butter (completely melted)
1/2 cup maple syrup
1/2 cup brown sugar
3 Tablespoons of Cinnamon

Mix all sauce ingredients together and pour evenly over your sweet potatoes/apples.

Bake uncovered at 350 degrees for 30 minutes. Enjoy!

  14. Made this recipe tonight and it was very good. Question I have is 3 tablespoons cinnamon? I added 1 tablespoon and that looked like a lot to me.
