Mom’s Famous Marshmallow Brownies

These are my favorite brownies of all time! I remember Mom making them so much growing up, but they were always to give to people in the ward or neighborhood so we would hardly get to eat them! I make them quite a bit because they are easy and it makes a TON so they are share with neighbors or take to a potluck party!
1 c. margarine
2 c. sugar
1/3 c. cocoa
4 eggs
1 1/2 c. flour
1 tsp. salt
2 tsp. vanilla
Soften margarine and blend in 2 cups sugar and cocoa. Beat together and add 4 eggs, one at a time. Add flour, salt and vanilla.
Spread on large (10x15x1 inch) greased cookie sheet. Bake 25 minutes at 350. Remove from oven and cover entire top with 1 package of miniature marshmallows. Return to oven for 3 minutes, until soft and puffy. Cool and frost with chocolate frosting.
Chocolate Frosting:
1 stick margarine (1/2 c.), softened
1/4 cup milk
1-2 tsp vanilla (depending on your taste)
3 tablespoons of cocoa
2-3 cups of powdered sugar
1/4 cup milk
1-2 tsp vanilla (depending on your taste)
3 tablespoons of cocoa
2-3 cups of powdered sugar
Mix all ingredients with a hand mixer until smooth. Add more powdered sugar or milk until you reach desired consistency and spread on top of bars.











These are hands-down my favorite brownies of all time!!!!

My brownies are similar but with a LOT more butter and instead of frosting over the marshmallows, FUDGE. Actually, I’m eating one now…

I added the recipe my mom always uses for her chocolate frosting to the bottom of the post. She has never written down the recipe so after a little trial and error, we came up with that! I hope it works!
What does “1 cube margarine” mean for the frosting? 1 stick? 1 tablespoon?

Has anyone used marshmallow creme instead of mini marshmallows? How did that work out?

ok, I just made these and they over flowed all over the bottom of my oven and that part burned and caused a huge mess – did this happen to anyone else??? The whole house was filled with smoke!
Sounds like your pan was too small. Did you use a cookie sheet?
I am not a baker…. Made these and they were devoured!!! Although they did not look as pretty as yours, the taste is what counts right?!
Do you need to refrigerate leftovers because of the milk in the frosting?
We usually just stick Saran wrap on them and stick them on the counter. I have never refrigerated them after I’ve made them
