This meal is one of my family's favorites! It is so easy to make, but tastes like you spent all day in the kitchen {at least my husband thinks so}. My husband liked it so much, he even did the dishes. :)
Chicken Cordon Bleu Recipe:
(Makes 7 servings)
Ingredients:
7 boneless, skinless chicken breasts
1/2 teaspoon salt
1/4 teaspoon pepper
7 slices Swiss cheese
7 slices cooked ham
1 cup Italian bread crumbs
1 eggs, whisked together
Directions:
Preheat over to 350 degrees. Coat a 9"x13" baking dish with nonstick cooking spray. Pound chicken breasts to 1/4 inch in thickness. Sprinkle each side of chicken with salt and pepper. Place one slice of cheese and one slice of ham on top of each chicken breast. Roll up each chicken breast and secure with a toothpick. Dip rolled chicken in egg wash, roll in breadcrumbs and place in baking dish. Bake for 30-35 minutes, or until chicken is cooked through. Remove toothpicks and serve. Top with sauce (optional).
Sauce (optional):
1 (10.75 ounce) can condensed cream of chicken soup
1/2 cup sour cream
1/2 cup milk
1/2 cup milk
1 Tablespoon lemon juice
Whisk together in a sauce pan over medium heat, until warmed through. Serve over chicken.
